Usually for the stall, they deep-fried the long bean/egg plant and then add to the curry. So, it looks green and nice and very fast in cooking, but might not be healthy (unless wash with running water which is waste of water) and oily for the home.
I still haven’t master on picking the right type of potatoes for curry. Some ready soft and nice for curry.
For some potatoes, it takes me ages in cooking still having get it soften. By right about 20mins should be able to get the potatoes soften, that is the timing I use for potatoe salad.

I used russet potatoes usually for my curries as I remembered watching a cooking show that mentioned it is the fastest to soften. Isn’t it?
I’m not sure how long I cooked this curry but other curries I cooked before where the potatoes and long beans has softened takes less than 40mins (I know becuase that is the duration I set for my rice steamer) from washing veggies till being served. However, do note that I used those instant curry pastes. Haha. The brand is Brahmins.
Oh I cannot do deep frying since I think that will waste my olive oil. Hehe.

I love curries, too… though too spicy for my kids. I noticed your container–I have the same one and use it for runny foods like yogurt & cottage cheese. It is great it is leak free with the locking seal. Will check back again for other lunchbox ideas, thanks!
